Sweet Potato, Carrot and Red Lentil Soup

This is one of our favourite soups to make. It’s so simple and full of flavour.

It’s one of the easiest, most comforting meals that we can never say no to. Whether it’s miserable and raining outside, or you’re just craving a warm bowl of goodness, this is feel-good food.

Sweet Potato, Carrot and Red Lentil Soup

Equipment

  • Blender (immersion or regular)

Ingredients

  • 2 medium sweet potatoes chopped
  • 3 medium carrots chopped
  • 1 cup red lentils
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tsp cumin ground
  • 1 tsp smoked paprika
  • 1 tsp chili flakes
  • 500 ml vegetable stock

Instructions

  • Saute the onion and the garlic
  • Add the spices and stir well
  • Once the spices have become fragrant, add a tbsp of veg stock to create paste
  • Add the sweet potatoes and carrots
  • Stir well
  • Add the red lentils
  • Add the stock and mix to combine
  • Bring to the boil and then lower to a simmer
  • Simmer for 20-30 minutes until everything is well cooked
  • Blend and serve

Notes

  • You can peel the vegetables if you like but we like to keep the peel on for added nutritional value.
  • We like to serve with fresh soda bread or wholemeal biscuits.
  • Toasted pumpkin seeds are a tasty garnish.
